HAUTE CUISINE AT THE GRAND HOTEL VICTORIA IN MENAGGIO
The territory where the Grand Hotel Victoria Menaggio is located is a treasure, we are very lucky, as Maestro Gualtiero Marchesi said, that Italy is rich in microclimates and that this particular territory benefits from the combined influence of the lake and mountains. The fundamental factor is to give a logical sense to menus in which the use of local raw ingredients with its particular seasonality is very important, but also to create gastronomic paths combined with the great potential of more than 400 wine labels present at the Grand Hotel Victoria. They were given a thread, in the form of a tale directed either to the ‘Ristorante gourmet 1827’ (whose name recalls the date of release of the Betrothed’s first edition) or to the Lago dell’hotel restaurant, a beautiful bright space with a view, that will remain forever an all-time dining, maintaining a link between the two menus.

I am particularly interested in quality Italian raw ingredients with their product seasonality, preferably biological. The latter is a factor which is today very important also in the eyes of the customers: biological, natural, no waste; it is something that goes beyond any trend and is about awareness of the use of raw ingredients.
